Bran Muffins

MAKES 12 MUFFINS

INGREDIENTS:
2 ½ cups of wheat or oat bran
1 Tbsp baking powder
1 cup of applesauce
1 cup milk (nut milk or dairy)
2 Tbsp molasses or honey
2 Tbsp oil
4 eggs
¼ cup raisins (optional)
½ cup chopped nuts (optional)

DIRECTIONS:
1. Preheat oven to 400°F.

2. In a large bowl combine wheat bran and baking powder. In a separate bowl, combine applesauce, milk, eggs, oil and molasses.

3. Mix wet ingredients until combined. Add wet to dry ingredients and mix until combined. Add in raisins and nuts (optional).

4. Measure equally into muffin tin and bake for 20 mins or until tops are golden brown and an inserted knife comes out clean from the middle of a baked muffin.

5. Enjoy with butter (great source of omega 3 & 6 fatty acids)
