Carrot Soup

Delicious and nutrients filled carrot soup.

Ingredients –

  • 1Tbsp coconut oil
  • 2 large leeks
  • 2 lbs of carrots
  • 1/2 Cup diced apple
  • 1tsp fresh ginger
  • 1/2 tsp cardamom
  • 4 cups of chicken stock
  • 1/2 cup canned coconut milk
  • salt and pepper to taste

Instructions –

  • Dice up leeks and soak to remove sand. Saute leeks with coconut oil for 5 minutes. Dice up carrots and peeled apples. Add all ingredients to pot to simmer for 45 minutes or until veggies are soft. Blend in small batches in blender until smooth.
  • Enjoy!

*Tip: Cooked carrots are more nutritious than raw carrots. If you steam or bake them whole and cut after they’re cooked, carrots are more flavorful and nutritious-WOW!
